Easy banana pancakes will sweeten your morning routine

If you're looking for a reliable recipe for a quick, delicious, healthy, and sweet breakfast, then today I have something special for you. These morning pancakes have worked wonders in my house. The kids are thrilled, and we adults have no complaints either. Isn't that the ideal way to start the day?

Admit it, breakfast isn't the ideal time for long and complicated cooking. I know many people who are totally fixated on cooking, who can spend entire days flipping through cookbooks and spending every free moment "over the pots." And you know what? None of them enjoys doing it in the morning, especially with the pressure of time, kids getting ready for school, and a dog demanding a walk. Oh no, breakfast should be quick, easy, and enjoyable. Wouldn't you agree?

In line with this principle, in my house, we have a few "breakfast options" to choose from each morning. One of them is sweet banana pancakes. It's hard to find an easier recipe because there's no need for dough to rise or rest. We combine the ingredients, heat up the pan, fry, and they're ready. Well, almost. We still admire the family enjoying a delicious breakfast in absolute silence. And that's priceless, isn't it?

Sweet banana breakfast pancakes

Ingredients:

  • 2 ripe bananas
  • 2 eggs
  • about 2 fl oz of milk
  • 4 tablespoons of thick natural yogurt
  • approximately 2 ounces of flour (I only use this as a "thickener" – you can use less or more)
  • a pinch of salt
  • vegetable oil for frying
  • honey

Preparation:

  1. Crack the eggs into a bowl, add the milk, natural yogurt, and bananas.
  2. Don't go overboard with the flour – the more you add, the less delicate the pancakes will be. Add it gradually while mixing. Also, season with a pinch of salt.
  3. At this stage, you can also add honey to the mixture, but there's nothing stopping you from skipping this and spreading it on the pancakes after frying.
  4. Spoon a bit of the batter onto a pan with hot oil and fry the pancakes on both sides. Drain excess oil on a paper towel, and they're ready. Enjoy!
