Bananas and eggs make a perfect pair. Bananas are full of potassium, magnesium, and carbohydrates that quickly replenish energy levels, stimulate the brain, and improve mood due to their natural sugars.

Meanwhile, eggs provide essential protein, vitamins, and minerals. The combination of these two ingredients ensures that the energy provided lasts much longer.

Banana pancakes without milk and flour

Making mini pancakes without any flour might seem impossible, but this recipe proves otherwise. It's perfect for those on a gluten-free diet and exceptionally easy to make. No flour substitutes are needed, making it suitable for those with lactose intolerance too.

To prepare the batter for pancakes for two people, you'll need:

  • 1 ripe banana,
  • 2 eggs,
  • a few drops of stevia,
  • half a teaspoon of cinnamon.

Preparation

  1. Peel the banana and blend it with the eggs into a smooth batter. Mix in the stevia and cinnamon. Instead of cinnamon, you can add a teaspoon of cocoa if preferred.
  2. Heat a pancake or griddle pan. Pour small portions of the batter onto the dry pan and cook for 2 minutes on one side, then flip and cook for another 2 minutes on the other side.

Sweet breakfast additions

If you're serving banana pancakes at home, you can enhance them with creative toppings like mascarpone cheese, peanut butter, or strawberry puree. They also taste delicious with yogurt or cream cheese, such as vanilla-flavored. You can drizzle them with honey or maple syrup for extra sweetness.
