Delicate, soft, and fluffy apple fritters are the dream breakfast for the end of summer and the beginning of fall. You don't need to add artificial leavening agents to give them a nice shape and make them melt in your mouth. I discovered this with one trick.

Apple fritters are a sweet breakfast or dessert, just like those from grandma's kitchen, which most people have fond memories of. They're best prepared using sweet apples, but sour varieties can be generously sprinkled with powdered sugar. Regardless of the level of sweetness, the best fritters are nicely risen, attractive, and golden brown. This is achievable without adding leavening agents.

Beaten egg whites are the secret to the texture

Contrary to what you might think, the trick is not to add yeast, which I also view as an additional leavening agent. The preparation technique for the batter is more critical. I don't mix whole eggs with the other ingredients. Instead, I separate the whites from the yolks, combine the yolks with the other ingredients, and beat the whites. I then gently fold the beaten whites into the raw batter using a silicone spatula.

Recipe for apple fritters without leavening agents

Reserve an additional three minutes to prepare this dish, and a portion of apple fritters for two will turn out just perfect.

Ingredients:

  • 2 large apples
  • 1 cup of milk
  • 1 large egg
  • 2 cups of flour
  • 3 tablespoons of sugar
  • Oil for frying

Preparation:

  1. Peel the apples, remove the cores, and grate them—some on larger holes, some on smaller holes of the grater.
  2. Sift the flour into a bowl. Add the sugar, egg yolk, and milk. Mix, then add the apples and mix again.
  3. In a tall container, beat the egg white until stiff using a whisk. Slowly fold the egg white foam into the batter.
  4. Heat a small amount of oil in a pan and fry the apple fritters in batches. Cook over low heat, cover the pan with a lid, and flip them gently. You can also bake the fritters, though they may have a different texture. Before serving, sprinkle the fritters with powdered sugar, especially if you use a sour variety of apples.
