The perfection of milk-stewed pork loin: Versatile enough to pair with any side dish
Ingredients:
- 1.76 lbs pork loin,
- Fresh thyme,
- Fresh sage,
- 4 tablespoons of vegetable oil,
- 1 teaspoon of salt,
- 1/2 teaspoon of pepper,
- 2 tablespoons of butter,
- 2 onions,
- 2 carrots,
- 2 cloves of garlic,
- 2-3 bay leaves,
- 2-3 pcs of allspice,
- 5 fluid ounces of white wine,
- 2 cups of milk.
For the sauce:
- 1.5 tablespoons of potato starch,
- 1/2 cup of water.
Preparation method:
Step 1. Begin by preparing the pork loin. Clean a large piece of meat, dry it and secure it with butcher's twine, placing fresh thyme and sage between the twine and the meat.
Step 2. Drizzle the meat generously with oil and season it with salt and pepper.
Step 3. Then transfer the meat to a pot with melted butter and sear it on each side. A pair of wooden cooking spoons will prove handy here. When the pork loin is seared all over, set it aside.
Step 4. In the same pot, start preparing the other ingredients. Fry the finely sliced onions, carrot rounds, and peeled garlic cloves.
Step 5. After 15 minutes of frying the vegetables, put the pork loin back into the pot.
Step 6. Next, add the bay leaves, allspice, white wine and milk to the pot. Now it's time to cover the pot and let everything stew for an hour.
After an hour, remove the meat from the pot. Blend the remaining ingredients in the pot into a smooth mixture. To finish off, add a mix of potato starch and water to the pot to thicken the sauce. And voila, you're done!
Step 7. Serve the stewed pork loin with a creamy sauce and your choice of cooked groats. Alternatively, you can serve it with potatoes, rice, a colorful salad or even french fries. Enjoy your meal!
