This thick oil with a slightly nutty flavor has found a permanent place in my refrigerator—and thereby also in my daily diet—thanks to a visit from my aunt from Austria. She brought something special to a family gathering, saying that Austrians add it to everything. Indeed, the oil worked well with both fried eggs and creamy soups, but it proved to be the best in a simple combination with tomatoes and garlic.

Simple salad with pumpkin seed oil

Austrian cuisine is very simple—its basis is meat from a good source, cheeses, and fresh vegetables, preferably from one's own garden.

Ingredients:

  • 2 large tomatoes
  • 3 cloves of garlic
  • 2 tablespoons of pumpkin seed oil

Instructions:

  1. Cut the tomatoes into cubes.
  2. Add garlic sliced very thinly.
  3. Pour the pumpkin seed oil over and let stand for 15-20 minutes to allow flavors to meld.

You can serve the salad with fried eggs or scrambled eggs for breakfast. It also works perfectly with hummus—place the tomatoes with the sauce on top of the dip and scoop up with a crusty baguette.
