The secret ingredient is an exotic fruit, namely avocado. Due to its consistency, it not only adds a creamy texture to the paste but also enriches it with healthy fats and vitamins. Its delicate, buttery taste complements the eggs perfectly, creating a harmonious and unique breakfast spread. Although it’s not just suitable for breakfast, you can also serve it on crispy bread or toast or as a side to fresh vegetables. It’s also great as a filling for crackers or wraps. It’s essential to choose a ripe one - for instance, a Haas avocado ready to eat.

Egg paste with avocado - recipe

Ingredients:        

  • 2 eggs
  • 1 tablespoon of mayonnaise
  • 1 teaspoon of mustard
  • 1 avocado
  • Salt and pepper to taste

Instructions:    

  1. Boil the eggs: Start by boiling the eggs until stiff. Place them in a pot with cold water, boil them, and cook for about 10 minutes. After boiling, place the eggs in cold water to make them easier to peel.
  2. Prepare the paste: Mash the peeled eggs with a fork in a bowl. Add mayonnaise, mustard, salt, and pepper. Mix everything thoroughly.
  3. Add the avocado: Cut the avocado in half, remove the pit, and scoop out the flesh. Then, mash it and add it to the egg paste. Mix thoroughly to combine the ingredients.

Healthy egg pastes

Avocado can replace more mayonnaise, but lighter versions can also be made with other products. Egg paste with natural yogurt: Replace mayonnaise with natural yogurt for a lighter version. Add chives, salt, and pepper for extra flavor. Egg paste with hummus: Instead of mayonnaise, use hummus. It will add extra creaminess and protein to the paste. Additionally, you can add chopped vegetables like bell peppers or cucumber to enhance the taste and texture. Egg paste with ricotta: Instead of mayonnaise, add ricotta.
