The Secret to Perfect Fries
The most crucial component of the perfect fries recipe is a unique marinade. It features basic seasonings such as salt, pepper, and paprika, along with a dairy element (natural yogurt or kefir). These ingredients create the fries' distinct flavor, but the crispiness comes from two other components - dried yeast and potato flour. Including these in the marinade lends the fries a unique crunchiness - no rubbery or soft textures, just perfectly crispy fried potatoes.
My Perfect Fries Recipe
Ingredients:
- 2.20 pounds of potatoes,
- 1 quart of cold water,
- 1 quart of boiling water,
- egg yolk,
- a tablespoon of salt,
- a teaspoon of black pepper,
- a teaspoon of sweet paprika,
- 1.26 cups of natural yogurt or kefir,
- 0.88 cups of potato flour,
- a teaspoon of dried yeast,
- 1.05 cups of oil.
Steps:
- Wash, peel, and cut the potatoes into 0.4-inch thick slices. Then cut them into long strips and transfer them to a large bowl.
- Soak the potatoes in cold water for 15 minutes.
- Next, drain the potatoes thoroughly before placing them back in the bowl.
- Submerge the potatoes in boiling water, and leave them for another 15 minutes.
- In a separate bowl, combine yolk, salt, pepper, sweet paprika, dried yeast, and kefir. Ensure that these ingredients are well mixed; then add the potato flour and stir until there are no lumps.
- After 3 minutes, pour the marinade over the potatoes. Mix well to ensure an even distribution of the marinade.
- Heat oil in a pan to 230 degrees F. There should be enough to fully cover the potatoes. Fry the potatoes in batches until they turn golden, around 7-8 minutes per batch. Enjoy!
