Cottage cheese is a popular snack. It satisfies the initial hunger and serves as a quick second breakfast for some. Importantly, you don't need to do much to turn this dairy product into something significantly more delicious. Sometimes, all it takes is a spoonful of honey, greens, or nuts. A bit more creativity can make cottage cheese a delicious casserole. How to do it? I'll explain everything now.
When we combine cottage cheese with a few clever additions, we can later pour it into a mold and bake it in the oven. What kind of additions am I talking about? Of course, eggs will ensure the right consistency for our snack. Additionally, something that will enhance the flavor is needed. I think the previously mentioned honey, a handful of forest fruits (it's no coincidence; after all, it's the season), and a bit of flavored pudding will work best here. Below, I'll show you one of the tried and tested recipes for such a casserole. You won't find a better snack idea today!
The perfect snack: cottage cheese casserole
Ingredients:
- 4 packages of cottage cheese
- 4 eggs
- 3 tablespoons of honey
- 2 teaspoons of vanilla extract
- 7 ounces of fresh forest fruits
- 3 teaspoons of instant pudding mix (e.g., vanilla)
- a pinch of salt
- butter
Directions:
- Strain the cottage cheese through a sieve. Transfer to a bowl and mix.
- Crack the eggs and separate the yolks and whites. Mix the yolks with honey and vanilla extract, and beat the whites with a pinch of salt until stiff peaks form.
- Mix the cottage cheese with the pudding mix, add the yolks, and then fold the egg whites using a spoon.
- Transfer the prepared mixture to a greased baking dish. Top with forest fruits — raspberries, blueberries, currants, whatever you want.
- Bake for about 20 minutes at 350°F. Let it cool in the oven with the door open, and it's ready. Enjoy!
