The moment I stumbled upon this cake recipe, I was convinced that I was onto something truly exceptional. Even though I have a soft spot for desserts that don't require baking, I confess, this was my first time making this type of cake. I am pleased to say the results were downright impressive: this recipe is foolproof, even for a complete novice. It's safe to say that you can bring this cake to life even with your eyes shut!
A no-bake fruit cake recipe
Ingredients:
- 8.8 oz of biscuits,
- 3.52 oz of butter,
- 1.1 pound of raspberries,
- 1.1 pound of natural yogurt,
- 2.82 oz of raspberry gelatin,
- 2 tablespoons of sugar.
Preparation steps:
- Pulverize the biscuits. You have two options here: using a blender or a rolling pin. If using the latter, it wouldn't go amiss to wrap the biscuits in foil or a net to prevent scattering crumbs.
- Melt the butter in a saucepan, then transfer it into a bowl and mix it with the crushed biscuits.
- Next, prepare a pan. I usually line it with baking paper and then evenly spread the biscuit and butter mix within it. This then goes into the refrigerator for a half-hour.
- Meanwhile, follow the instructions on the gelatin packet to dissolve it. Let it cool, but ensure that it doesn't start to set. At this point, you can combine the yogurt and sugar.
- Divide the raspberries into portions (I prefer fresh raspberries when in season). Spread a layer on the base of the cake you had prepared and chilled earlier. Spoon over the sweetened yogurt, top it off with the gelatin, and place it back in the fridge.
- All you need to do now is wait for roughly 2-3 hours, and your no-bake fruit cake will be ready to serve.
