I often rely on crepes for a quick lunch. The batter takes moments to prepare, they need just a short time to fry, and soon you have scrumptious pancakes ready to serve. Whether you fill them with sweet jam, curd cheese, chocolate, or if you prefer a savory stuffing, the success of a dish lies in making a good pancake. When it comes to savory fillings, I like to prepare lentil pancakes. Fascinatingly, you don't need to use flour or eggs to make them.

Introducing flourless pancakes
Surprisingly, lentils play the role of flour in these pancakes. As a nutrient-rich legume offering ample protein and fiber, lentils aid digestion and provide substantial amounts of folic acid, iron, and potassium. Their nutritional benefits make them worth considering for your diet, and one appealing way to include them is through these nutritious pancakes.
These lentil pancakes pair well with savory fillings. Try filling them with meat in sauce, spinach and feta cheese, or your favorite vegetables. Note that they end up much thicker than traditional pancakes, it's best to fry them using a pancake pan or to flip them like an omelette by sliding them onto a plate, flipping, and tossing back into the pan. Since you'll be adding oil to the batter, there's no need to grease the pan.
Ingredients you'll need:
- About 14 ounces of dry red lentils,
- A large pinch of salt,
- A pinch of turmeric (for color),
- Water,
- Approximately 2.7 fluid ounces of oil.
Here's the preparation method:
- Start by placing the lentils in a bowl and pour twice their amount of water over them. Leave them to soak for 2-3 hours.
- Once soaked, drain the lentils and transfer them to a blender. Blend them gradually, adding a little fresh water at a time, until you achieve the consistency of a thin cream.
- While blending, slowly add oil, salt, and turmeric.
- Next, heat a non-stick pan. Pour in a ladle of the batter and spread it evenly across the surface.
- If the batter continues to thicken in the bowl, add a little more water and stir well.
- Once the pancake sets, flip it over and fry until it's fully cooked.
- Finally, spread your favorite filling over your pancake. Bon appétit!
