Wait until it cools and seal it in a jar.
Long shelf life
You can store duck fat in a sealed jar in the refrigerator for 3-4 months. If transferred to a low-temperature-resistant container, you can freeze it, retaining its freshness and valuable nutrients for 6-8 months.

Marinated meat is placed in a roasting pan with duck or goose fat, then put in an oven preheated to 248 degrees Fahrenheit for several hours—between 3 to 6 hours, depending on the amount of meat. Duck confit is traditionally served with roasted potatoes, stewed cabbage, and cranberry sauce.
