The world of mushrooms conceals flavors that many people have never even imagined. During forest walks, it's worth looking out for more than just chanterelles, boletes, and porcini mushrooms. There's one particular specimen growing on tree trunks that you'll fall in love with as soon as you prepare it.

A Facebook post emerged from a user who discovered an unusual mushroom called the "chicken of the woods." This yellow-orange mushroom, found on deciduous trees, can be prepared to taste remarkably like chicken. It sounds quite unbelievable, but once you try it, you'll understand. The amount of umami, or the so-called "meaty" flavor in mushrooms, is genuinely significant. In this case, combined with the appropriate texture, it transforms the sulfur shelf into what some call forest chicken.

Look out for this mushroom

Sulfur shelf can mostly be found on trees such as oaks or chestnuts, especially from May to July, but younger specimens can also be found in the fall, so it's worth keeping your eyes peeled when mushroom hunting. This mushroom is notable for its size, 4 to 20 inches in diameter, and striking yellow-orange color. Collecting only young specimens is essential, as older ones become hard and inedible. Before picking, check the softness of the underside of the cap.

Young, fruiting bodies have an intense yellow color that fades with age. Older specimens are often more orange or white. Besides checking the underside of the cap, observe the entire structure of the mushroom. Young sulfur shelves are soft and juicy, while older ones become hard and tough. Always examine the mushroom carefully and consult an expert if in doubt.

Do not collect sulfur shelf growing on yew trees, as there is a risk that the mushroom will absorb toxic substances from the tree.

How to use sulfur shelf in the kitchen

Sulfur shelf is an intriguing mushroom that can serve as an exciting alternative to meat. If you enjoy experimenting in the kitchen and want to try something new, it's worth looking for it in the forest (provided you know how to identify it) to prepare a delicious meal.

Before using the sulfur shelf, it must be boiled for 10-20 minutes. Although it emits an unpleasant odor during cooking, this mushroom is wonderful for tarts, pâtés, or cutlets. It can also be breaded and fried, much like classic cutlets. It's an excellent substitute for chicken and can add diversity to your diet.
