Ladenia is a Greek variation of pizza. It is made with olive bread, and what makes it distinctive is the absence of cheese—not even Greek cheese. This makes it a delicious and lighter alternative to classic pizza. A few ingredients are enough to create something wonderful.

Greek ladenia - cheese-free pizza

Ladenia is a baked flatbread made with yeast dough, generously drizzled with olive oil, and topped with layers of tomatoes and onions. It hails from the small island of Kimolos, located in the Cyclades archipelago in the Aegean Sea. This is a simple yet delicious dish where high-quality ingredients, especially olive oil, play a crucial role.

It is usually served warm and cut into pieces. It works perfectly as a snack, a light lunch, or as a side to other Greek dishes. It's also worth keeping this recipe handy as grilling season approaches—it pairs perfectly as a complement to meats grilled on the barbecue.

Ingredients:

          

  • 2 pounds of wheat flour
  • About 1 cup of warm water
  • 0.7 ounces of dried yeast
  • 2 red onions
  • 3 fresh tomatoes
  • 4 tablespoons of tomato puree
  • 2 tablespoons of sesame seeds
  • 1 teaspoon of dried mint
  • 1 teaspoon of sea salt
  • 7 fluid ounces of extra virgin olive oil

Method of preparation:

                    

  1. Pour a small amount of warm water into a large bowl, add the yeast, and mix.
  2. Gradually add the flour and remaining water, mixing until combined.
  3. Knead the dough until it is smooth and elastic.
  4. Roll it out to about 0.8 inches thick, dusting with flour to prevent sticking.
  5. Generously grease a large baking sheet with olive oil.
  6. Spread the dough on the sheet, pressing lightly with your fingers.
  7. Let it rise for 20 minutes.
  8. Brush the top of the dough with tomato puree.
  9. Layer the sliced onions and tomatoes on top.
  10. Sprinkle the entire thing with sea salt, mint, and sesame seeds.
  11. Bake in an oven preheated to 355 degrees Fahrenheit for 20 minutes, until the dough is golden.

After this time, the ladenia is ready to eat. You can serve it either warm or cold. Enjoy!
