Although the book dates back to 1893, the recipe delights with its creativity, simple ingredients, and promise of delicious results. How do you make fluffy pancakes?
The biggest difference in preparing pancakes from the late 19th century compared to classic modern pancakes is that they are not just fried in a pan. Although you can simply flip them to the other side, you achieve much better results when you transfer them briefly to a preheated oven. You can add grated lemon zest to the batter or sprinkle the pancakes with freshly squeezed lemon juice after baking. Their aroma will fill the entire apartment, laying the foundation for a good day.
A dessert with pancakes like in an exclusive restaurant

Ingredients:
- 2 eggs
- 4-5 tablespoons of all-purpose flour
- A little milk or sweet cream
- 2 tablespoons of butter (preferably clarified)
- Lemon
- Powdered sugar for sprinkling pancakes
Instructions:
- Take the eggs and separate the whites from the yolks.
- Mix the yolks with flour and a little milk (or cream). The batter should be thick but without lumps.
- Whisk the egg whites into a foam, then carefully mix it with the prepared yolk and flour batter.
- Heat the butter in a pancake pan.
- Spoon small pancakes into the pan. Fry until they are golden on the bottom and the batter on top is set.
- Transfer the prepared pancakes to a baking sheet lined with parchment paper, with the uncooked side up. Bake for 5 minutes at 350 degrees Fahrenheit.
- After baking, sprinkle the pancakes with lemon juice and powdered sugar.
If you have a pan with a detachable handle or without plastic elements, you can place it with the pancakes in the oven. As a last resort, flip the pancakes to the other side. However, it must be said that baking them tastes much better.
