Delight your guests with this brilliant snack
Over the years, I’ve developed the habit of preparing a particular dish every time my Bob's Cafe team and I sit down for lunch in my restaurant.

I'm not entirely sure why I do this. Perhaps it's because the dish is simply delicious, and I want to impress my team or because it's uncomplicated to prepare, which fits well with my laid-back style. Either way, these doughnuts paired with honey, guacamole, or a variety of other sauces – like the sweet and sour chili sauce pictured here – are a treat.
Corn doughnuts: a step-by-step recipe
Ingredients:
- 0.88 cups of flour,
- ½ teaspoon of baking powder,
- ½ teaspoon of salt,
- 2 teaspoons of sugar,
- 1 teaspoon of ground paprika,
- ¼ teaspoon of pepper,
- 1 egg,
- 0.42 cups of buttermilk,
- 0.53 cup of cooked corn kernels,
- 1 small bunch of fresh cilantro,
- 6.34 cups of frying oil.
Sweet chili sauce:
- 0.51 cup of water,
- 0.51 cup of rice or wine vinegar,
- 0.44 cups of sugar,
- 1 teaspoon of crushed red pepper flakes,
- 1 teaspoon of peeled, grated ginger
- 1 teaspoon of chopped garlic,
- 1 teaspoon of ketchup,
- 1 teaspoon of cornstarch.
Preparation:
SAUCE
Combine water, vinegar, and sugar in a saucepan and bring the mixture to a boil. Add the chili flakes, ginger, garlic, and ketchup, cooking for 5 minutes. Add the cornstarch and whisk until it dissolves. Transfer the sauce to a bowl and let it cool before serving.
DOUGH
Heat the frying oil in a large pot until it reaches a temperature of 338°F. In a separate bowl, mix flour, baking powder, salt, sugar, paprika, and pepper. In another bowl, beat the egg and milk. Merge these ingredients and whip until a uniform consistency is achieved. Then, add the corn kernels and chopped cilantro.
FRYING
Use a scoop of dough equal to the size of one ice cream scoop to form the doughnuts, then drop them into the heated oil. You can also prepare the doughnut balls using two tablespoons.
Fry each doughnut for approximately 6 minutes, turning halfway through to ensure an even, golden color on both sides. Drain the doughnuts on a rack or paper towel and serve hot.
If you plan on making them ahead of time, you can easily reheat them in the oven just before serving.
