Delicious twist on broccoli salad blends bacon and yogurt

Broccoli is rich in vitamin C, fiber, and sulforaphane, which doctors believe have potential for combating cancer. Overcooked vegetables may not look appetizing, but they have become quite popular when delicately blanched and combined in a salad with delicious add-ins.

Broccoli salad often features feta cheese and sunflower seeds. A light dressing made with olive oil, honey, and lemon juice complements this combination well. However, for this recipe, I chose a more savory version. I combined broccoli florets with cauliflower, added fried bacon, and mixed everything with a creamy Greek yogurt-based dressing.

Fruity add-ins for broccoli salad

Enhance the salad with fresh or dried fruits. For a crunchy addition, choose an apple, and make sure to sprinkle it with lemon juice to prevent browning. Add grapes or orange segments if you're looking for juiciness and refreshment. For a boost of sweetness, consider dried cranberries. While my recipe doesn't include fruit add-ins, you might like experimenting with them.

Recipe for broccoli salad with bacon

You can skip the cauliflower in the salad and simply add more broccoli florets if preferred.

Ingredients:

                      
  • 1 small broccoli
  • A few cauliflower florets
  • 11 oz of smoked bacon
  • 7 oz of yellow cheese in a block
  • 1 red onion
  • 5 sun-dried tomatoes in oil
  • 2 tablespoons of Greek yogurt
  • 1 tablespoon of mayonnaise
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions:

            
  1. Divide the broccoli and cauliflower into small florets, wash them, and place them in boiling water for 2 minutes. Drain and rinse with cold water, then set aside to drain further.
  2. Fry the diced bacon in a dry pan until crispy.
  3. Slice the onion, drain the sun-dried tomatoes and cut them into strips, and grate the yellow cheese using a coarse grater.
  4. In a large bowl, combine all the ingredients: blanched broccoli and cauliflower florets, fried bacon, sliced onion, sun-dried tomatoes, and grated yellow cheese.
  5. In a separate bowl, mix the Greek yogurt with mayonnaise, tomato oil, and lemon juice. Season with salt and pepper to taste. Toss the salad with the dressing until well combined.
