Delicious banana rolls: Turn overripe fruit into tasty treats

Homemade rolls with fresh fruits are always a great idea for a mid-morning snack at school or work. We often choose apples, raspberries, or plums, but bananas can be a delicious addition as well. It's a perfect way to use up those overripe bananas.

For homemade yeast rolls, fruits are usually used as toppings. However, with bananas, the process is different because the bananas are mashed and incorporated into the dough. This method is similar to that of banana bread or pancakes.

Buy bananas wisely

Who hasn't bought too many bananas? Often, we grab a whole bunch at the store because they are delicious and usually quite affordable. Unfortunately, sometimes we miscalculate, or they ripen too quickly. In such cases, we have a plethora of options. You can quickly blend them into a smoothie or make pancakes. If you have a bit more time, baking some yeast rolls is worth considering.

How to store bananas?

Bananas are one of the most popular fruits during this time of year. We enjoy them raw, in oatmeal, or blended into smoothies. Ripe bananas are great for baking since they are naturally sweet and can even replace sugar. However, it's easy to find yourself with an overabundance, which can be challenging to manage. That's why it's important to remember to store them at room temperature with good air circulation. When they start to develop spots, it's better to move them to the refrigerator. While this won't significantly slow their ripening, it gives you time to think about how to use them. We suggest baking rolls.

Banana yeast rolls recipe

Ingredients:

  • 2 overripe bananas
  • about 1 lb of all-purpose flour
  • about 2 tbsp of melted butter
  • 1 egg
  • 1/4 oz of dry yeast
  • 50 chocolate chips or chopped chocolate, optional
  • a pinch of salt

Instructions:

  1. Peel the bananas and mash them with a fork or use a blender. Mix the mashed bananas with the egg and melted butter.
  2. In a separate bowl, combine the sifted flour with the yeast and salt. Gradually incorporate the dry ingredients into the wet mixture and mix thoroughly.
  3. Add chocolate chips or chopped chocolate to the dough. After mixing, cover the bowl with a cloth and let it rest in a warm place for 2-3 hours.
  4. After this time, the dough should double or even triple in volume. Punch it down to release excess gas, then transfer it to a floured work surface.
  5. Divide the dough into 12 equal parts, coat each with flour, and shape them into smooth balls. Place the rolls on a baking sheet lined with parchment paper.
  6. Space the rolls out on the sheet and cover them with a cloth, allowing them to rise for another 40 minutes.
  7. Preheat the oven to 350°F, then bake the rolls for 20 minutes.
  8. Once baked, let them cool. You can sprinkle powdered sugar on top before serving.
