If you don't know how to use apricots in the kitchen, this recipe comes to the rescue. A shortcrust pastry embracing fruits spiced with a touch of cardamom is the perfect dessert for fall days.

Delicious cake with apricots is a classic that has proven itself over the years. Cinnamon pairs wonderfully with sweet apricots, adding an autumnal character to the bake. It looks impressive, thanks to the lattice crust, and the aroma makes everyone's mouth water just looking at it.

Some call it a cake; others call it a pie due to its relatively flat shape. Regardless of our chosen name, it will always taste just as good.

You can also use peaches, cherries, or plums for this recipe. To emphasize the autumnal character of the bake, add aromatic spices, such as cinnamon or cardamom.

Ingredients:

Crust:

                          
  • 7 oz cold butter
  • 9 oz all-purpose flour
  • 1 egg
  • 1.75 oz powdered sugar
  • 2 tablespoons 18% sour cream
  • 1 teaspoon baking powder

Filling:

              
  • 14 oz apricots
  • 2.8 oz sugar
  • 1 teaspoon cinnamon

Preparation method:

Step 1. Sift the all-purpose flour into a bowl. Add the baking powder and cold butter cut into pieces. Knead, also adding the egg and sour cream. Refrigerate for 30 minutes.

Step 2. Cut the apricots in half and remove the pits. Transfer the fruits to a pot, add the sugar and cinnamon. Heat until they begin to soften and release juice.

Step 3. Divide the chilled dough into two parts. Roll out one part on a floured surface and line a tart pan, covering also the edges.

Step 4. Fill the pan with apricots. From the remaining dough, create a lattice and braid to encircle the pastry. Place in an oven preheated to 350°F for 45 minutes.

Step 5. After baking, dust the cooled cake with powdered sugar. Enjoy!
