Potato pancakes enjoy great popularity. Although the recipe is extremely simple and always based on potatoes, slight variations might exist. For example, some people add raw onions to the mix, while others add bacon. They can also be served in many different ways. But that's not the end of the possibilities offered by this simple dish. It's worth preparing the pancakes according to a recipe that guarantees a crispy exterior and a delicate interior. Additionally, grating the potatoes will be unnecessary.
Less greasy and more delicate
Potato pancakes are one of the most popular dishes in Polish cuisine. However, they are known worldwide and are often prepared slightly differently elsewhere. They are often less greasy and use boiled potatoes. The Korean version, gamja-jeon, are thin, spicy pancakes with the addition of garlic and chili, which use minimal fat. In Germany, reibekuchen are made from boiled potatoes and served with sour cottage cheese. Meanwhile, Swiss rosti are greasy, crispy pancakes that spend the night in the fridge to enhance the flavor, becoming a golden crust treat by morning.
Potato pancakes without grating
Ingredients:
- 2.2 lbs of potatoes,
- 5 oz of yellow cheese,
- 2 eggs,
- 3 tablespoons of flour,
- 3.5 oz of Greek yogurt,
- Salt and pepper to taste,
- Oil for frying,
- Parsley or dill (optional).
Preparation method:
- Wash and peel the potatoes, then cook them until soft.
- Mash the cooled potatoes into a smooth mass. Once they are cool, add cheese and spices, and form the pancakes.
- Mix yogurt, eggs, and flour, and coat the pancakes in this mixture.
- Fry in a heated pan until golden brown.
- Serve with sour cream, cheese sauce, stew, or salad.
