Potato bites with halloumi

Potatoes are a versatile ingredient for many culinary experiments, and fries and casseroles are just the beginning. In this recipe, they become the base for crunchy bites that perfectly replace classic chips or breaded mozzarella.

This recipe is also perfect for using up cooked potatoes from the previous day. The bites are crunchy on the outside, yet soft and moist on the inside. They're an excellent snack for a party, a gathering with friends, or simply as a dinner side.

Ingredients:

  • 1.3 lbs of potatoes
  • 1 teaspoon of salt
  • 3.5 oz of smoked ham
  • 2 tablespoons of potato starch
  • 2 eggs
  • 4.2 oz of halloumi cheese
  • 1/3 cup of chopped parsley

Preparation:

Step 1. Peel the potatoes, cook them until tender, and mash into a smooth puree. Add eggs and potato starch, and mix thoroughly.

Step 2. To the potato mixture, add grated or very finely chopped ham, parsley, and crumbled halloumi cheese. Mix well.

Step 3. Transfer the resulting mixture to a pastry bag. Squeeze portions of the dough into hot, deep oil, cutting off the ends with scissors. It's similar to making small churros. Fry until they are golden brown.

Step 4. Place the ready bites on a paper towel to remove excess oil. Serve with a favorite dip, like garlic sauce or sriracha mayo. Enjoy!
