Whenever I find myself with leftover boiled potatoes, I eagerly turn to this recipe. It's crispy, uncomplicated, and utterly delicious - exactly to my liking. Since mastering this recipe, it has become a nearly constant feature in my kitchen, earning the adoration of my entire family. Crispy battered potatoes have quickly become a household favorite.

Crispy French Potatoes

Potato enthusiasts will fall in love with this dish, reminiscent of potato pancakes but with a twist. Instead of being grated, these recipes use slices of boiled potatoes dipped in a flavorful batter made with flour, egg, yogurt, and spices. The result? Delightfully crispy battered potatoes.

This inventive rendition presents potatoes for dinner in a fresh light. Move over, boiled and mashed potatoes, and make way for crispy, battered slices. Their irresistible taste might even secure them the spotlight as the main course. Pairing them with a garlic sauce comes highly recommended; they're simply scrumptious.

Ingredients:

  • 14-18 oz of potatoes
  • 1 egg
  • 2-3 tablespoons of thick yogurt
  • 2-3 tablespoons of wheat flour
  • 1 tablespoon of potato starch
  • 1 teaspoon of dried garlic
  • 1 teaspoon of Herbes de Provence
  • Oil for frying
  • Salt and pepper to taste

How to prepare:

  1. Peel, wash, and slice the potatoes into 0.2-0.3 inches thick rounds.
  2. Boil them in salted water for 5-7 minutes, adjusting for thickness. Drain and allow to cool, ensuring they remain slightly firm.
  3. Prepare the batter: In a bowl, whisk together the egg, yogurt, salt, garlic, Herbes de Provence, and pepper until well combined.
  4. Gradually add the flour to the mixture, aiming for a thick cream-like consistency of the batter.
  5. Fully coat the cooled potato slices in the batter on both sides.
  6. Heat oil in a frying pan and arrange the potatoes in a single layer.
  7. Fry until each side turns golden brown, which should take about 3-4 minutes per side over medium heat.
  8. Transfer the potatoes onto a paper towel to remove excess oil.
