A crepe cake is a great solution for many culinary crises. A flat sponge cake or a soggy dessert won’t be a problem. Anyone can make crepes, and with chocolate, nuts, and cream cheese, they transform into a delicious treat.

Crepe cake with cream

Crepes don’t have to be boring or typical. Instead of rolling them up or folding them, try stacking them. There's no monotony here because between the layers lies a simple cream made from curd cheese and mascarpone. Additional chocolate glaze and nuts ensure complete happiness.

This crepe dessert is perfect for special occasions, family gatherings, or visits from the in-laws. You can also add fresh fruits like strawberry slices, blueberries, or raspberries. This will add lightness and freshness, especially in summer.

Ingredients:

Crepes:

  • 2 cups of flour,
  • 2 cups of milk,
  • 1.5 cups of sparkling water,
  • 4 eggs,
  • a pinch of salt,
  • 1 tablespoon of sugar,
  • oil for cooking.

Cream:

  • 9 oz of mascarpone cheese,
  • 9 oz of semi-fat curd cheese,
  • 7 oz of heavy cream,
  • 1 teaspoon of vanilla extract,
  • 3-4 tablespoons of powdered sugar.

Chocolate Glaze:

  • 7 oz of dark chocolate,
  • 2/3 cup of heavy cream.

For topping:

  • 1/2 cup of toasted chopped hazelnuts.

Preparation Method:

  1. Start with the crepes. Combine all the ingredients in a bowl and mix thoroughly.
  2. Let the batter rest for 15 minutes.
  3. Cook the crepes in a pan greased with oil, then set them aside to cool.
  4. In a large bowl, whip the chilled heavy cream until stiff. Add the powdered sugar at the end.
  5. In a separate bowl, mix or blend on low speed the chilled mascarpone cheese and curd cheese.
  6. Slowly fold the whipped cream into the mascarpone and curd mixture. Mix gently with a spatula or spoon.
  7. Layer the crepes with the cream, optionally adding chopped nuts inside. Leave the top crepe without cream.
  8. Melt the chocolate with the cream and pour it over the crepe cake.
  9. Sprinkle with the remaining nuts.
  10. Refrigerate the crepe cake for at least 2-3 hours, or preferably overnight, to allow the cream to set and the flavors to meld.

After this time, your crepe cake is ready. Cut it into portions like a cake and enjoy!
