Crazy Cow Cake - A recipe for an exceptional dessert
Heaven in your mouth! This cake is indeed a calorie bomb, but it's worth the indulgence. The layers of meringue, nuts, dates, caramel cream, and whipped cream blend to create an unforgettable taste. You can use classic caramel or chocolate-flavored caramel, depending on your preference.
This cake is moist, aromatic, and so beautiful that it's almost a shame to eat it. Fortunately, that hesitation only lasts a moment because it's impossible to refuse a piece.
Ingredients:
Sponge Cake
- 3 large eggs
- 1/2 cup sugar
- 2 teaspoons vanilla sugar
- 1/2 cup wheat flour
- 1/4 cup cocoa powder
- 1/2 teaspoon baking powder
Soaking
- 1/4 cup water
- 1 tablespoon lemon juice
- 1 teaspoon powdered sugar
Cream
- 1 3/4 cups chilled 30% cream
- 1 cream stabilizer
- 9 oz. mascarpone cheese
- 7.5 oz. caramel from a can
- 3.5 oz. chopped dates
- 3.5 oz. chopped walnuts
Meringue
- 4 egg whites
- 7 oz. fine sugar
- 2 teaspoons vanilla sugar
Preparation Method:
- Start with the sponge cake. Separate the egg whites from the yolks and beat until stiff.
- While mixing, add the yolks, sugar, and vanilla sugar.
- Combine with the sifted dry ingredients.
- Pour the batter into a pan and bake for about 25 minutes at 350°F. Check with a skewer to see if the cake is ready.
- Set aside to cool.
- After cooling, soak the cake with a mixture of water, lemon juice, and powdered sugar.
- Prepare the cream: Whip the chilled cream with the stabilizer.
- Add the mascarpone cheese and caramel, mixing until well combined.
- Finally, add the chopped dates and nuts, gently mixing with a spatula.
- Spread the cream over the cooled sponge cake and refrigerate.
- Proceed with the meringue: Beat the egg whites until stiff, gradually adding sugar.
- Draw a square of the same size as the sponge cake on parchment paper.
- Spread the meringue on the paper.
- Place the tray with the meringue in an oven preheated to 250°F with convection. Bake for 15 minutes, then reduce the temperature to 230°F and dry for about 2.5 hours.
- Place the meringue on top of the sponge cake and chill the cake in the fridge.
