Are you a fan of poppy seed cake? I certainly am, and I eagerly anticipate every Christmas Eve when I can finally savor it. However, I understand the struggle of often not having enough time to prepare a poppy seed roulade. Fortunately, I have a recipe that I frequently use, and it's never disappointed me. Over time, this "alternative" has become my go-to option for holiday cakes.

The pudding poppy seed cake is a unique delicacy that, as the name suggests, artfully blends two ingredients that aren't typically paired. The cake is not only visually appealing, but is also much simpler and quicker to prepare than traditional poppy seed cakes. Given my family's fondness for this cake, I find myself preparing it again this year, and I recommend that you try it out too!
Pudding Poppy Seed Cake Recipe
Ingredients:
- Approximately 0.44 lbs of butter,
- 1 egg,
- About 0.88 lbs of wheat flour,
- A pinch of salt,
- 1.5 cups of sugar,
- 2 teaspoons of baking powder,
- 3 cups of milk,
- 2 packs of pudding powder,
- Approximately 0.55 lbs of ground poppy seeds,
- A few drops of almond extract,
- 1 teaspoon of vanilla sugar,
- Breadcrumbs for lining your baking form,
- Confectioner's sugar for dusting.
Method of Preparation:
- Sift the flour and baking powder together. Then mix these dry ingredients with a cup of sugar and a pinch of salt. In the next step, blend in the cold butter and the egg.
- Knead the ingredients until the dough becomes uniform. Shape it into a ball, wrap it in cling film, and place it in the refrigerator.
- Mix the pudding powder into one cup of milk. Pour the remaining milk into a pot, bring it to a boil along with half a cup of sugar and the vanilla sugar. Next, add the pudding mixture, stirring continuously.
- Once the mixture thickens, incorporate the poppy seeds and almond extract. Allow this to cool.
- Grease your baking form with some butter and sprinkle the breadcrumbs evenly. Use two-thirds of the previously prepared dough to line the bottom and sides of the form. Pour the poppy seed pudding into the center, then crumble the remaining dough on top. The cake should be baked for about 50 minutes at 356 degrees. Let it cool, and serve dusted with powdered sugar.
