Quick cottage cheese pancakes

Cottage cheese is a rich source of protein, calcium, and B vitamins, which makes these pancakes more filling and nutritious than traditional pancakes. It's a breakfast that both kids and adults will enjoy.

You can also modify the recipe by adding cinnamon, cardamom, pieces of dark chocolate, or chopped fruits to the mixture.

Ingredients:

              
  • 11 oz of cottage cheese
  • 2 eggs (separate whites and yolks)
  • 6 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 1 packet of vanilla sugar
  • Oil or clarified butter for frying

Instructions:

                
  1. Separate the egg whites from the yolks.
  2. Place the cottage cheese in a bowl—choose a natural variety without additives.
  3. Add the yolks, white sugar, vanilla sugar, and all-purpose flour, and mix thoroughly.
  4. Beat the egg whites with a pinch of salt until stiff, then add to the yolk mixture.
  5. Carefully mix with a spatula to maintain the fluffiness.
  6. Heat oil or clarified butter in a pan.
  7. Spoon portions of the mixture onto the pan and fry the pancakes for about 2-3 minutes on each side until golden brown.

Serve the finished pancakes with accompaniments such as powdered sugar, jam, fresh fruits, or chocolate cream. These pancakes are perfect to take to work or school and can be enjoyed warm or cold. Preparing them doesn't take much time, and the end result is a dish full of flavor and nutritional value. Enjoy!
