Recipe for Czech Corsair Cutlets

Thanks to the unique combination of ingredients such as yellow cheese, leek, pineapple, and eggs, Corsair cutlets offer a unique, juicy flavor. This dish will certainly outshine traditional pork chops and meatballs, introducing a new contender into culinary arenas.

Ingredients:                                      

  • 1.1 lb chicken breast
  • 0.9 lb pineapple slices
  • 0.4 lb leek
  • 0.4 lb yellow cheese
  • Salt — a pinch
  • Hot paprika — a pinch
  • Pepper — a pinch
  • 1 oz flour
  • Two eggs
  • 2 fl oz oil

Preparation:                      

  1. Remove the membranes from the chicken breast and cut it into small cubes. Grate the cheese using a large grater. Rinse the leek, dry it, and cut it into rings. Peel fresh pineapple and cut it into cubes (if using canned pineapple, drain the syrup and cut).
  2. Heat 1 fl oz of oil in a pan and sauté the leek over medium heat for 3-4 minutes until soft.
  3. Combine the pineapple, chicken, and grated cheese in a large bowl. Add the sautéed leek, flour, beaten eggs, and spices. Mix thoroughly.
  4. Heat the remaining oil in a pan. Form cutlets from the mixture and fry them in the hot oil for about 4 minutes over medium heat. Then, cover the pan with a lid and steam the cutlets for another 4 minutes. After that time, uncover the pan and fry the cutlets for another 2-3 minutes until golden brown.
  5. Drain the ready cutlets of excess fat on a paper towel.
  6. Alternatively, you can bake the cutlets in an oven preheated to 350°F for 30-35 minutes.
