Chocolate sour cherry cake: A simple yet irresistible treat

Cherries have given way to sour cherries, becoming one of the fruits tempting with an attractive price. Many people wonder how to use them beyond making compotes. One of my favourite recipes is a moist chocolate cake with the addition of sour cherries.

It's very simple to make, and almost immediately after it appears on the table, it disappears to the last crumb. I don't know a better combination than sour cherries and chocolate. The fruit's slightly tart, refreshing taste perfectly balances the dessert's chocolate sweetness.

Simple cake with sour cherries

In this cake, simplicity plays the most important role. Most of the ingredients you already have at home, and you can buy sour cherries at an attractive price.

Sour cherries, mainly associated with compotes or liqueurs, are a great ingredient for cakes and desserts. Although many recipes indicate jarred ones, I use fresh, pitted fruit in my chocolate cake. This way, they taste even better, perfectly blending with the soft, moist cake.

Chocolate cake with sour cherries

Making this dessert is a piece of cake; you don't need to take out a mixer. Mix all the ingredients with a spoon, pour into a baking pan, add the sour cherries, and bake. Remember to remove the pits, as an encounter with one of them could result in an unpleasant (and costly) visit to the dentist.

Ingredients:

  • 2 cups all-purpose flour,
  • 2 eggs,
  • 3 tablespoons cocoa powder,
  • 3/4 cup sugar,
  • 1.5 teaspoons baking powder,
  • 1/4 cup oil,
  • 7 oz milk,
  • 1 cup fresh pitted sour cherries,
  • powdered sugar for decoration.

Preparation:

  1. Prepare two bowls.
  2. Place the flour, cocoa powder, sugar, and baking powder in one. Mix.
  3. In the second bowl, crack the eggs, add the milk and oil, and whisk everything together with a fork or briefly mix.
  4. Pour the wet ingredients into the dry and mix.
  5. Line a loaf pan with parchment paper. Pour in the prepared batter.
  6. Add the pitted sour cherries, gently pressing them into the cake.
  7. Place in an oven preheated to 350°F and bake for 40 minutes.

After baking, remove the cake from the pan and let it cool well. Decorate with powdered sugar and cut into pieces. Enjoy!
