  • 1 onion
  • ¼ cup rice vinegar
  • ⅓ cup oil

  1. Preparing the vegetables – Start by thoroughly washing all the vegetables. Chop the cabbage into small pieces. If you prefer a crunchier texture, you can leave larger pieces of cabbage. Peel the carrot and grate it on a coarse grater, and peel and thinly slice the onion. Transfer all the vegetables to a large bowl.
  2. Preparing the dressing – In a small pot, combine the rice vinegar, sugar, salt, and garlic pressed through a garlic press. Heat the mixture over low heat until the salt and sugar completely dissolve. Remember not to bring the dressing to a boil – it should be hot but not boiling.
  3. Combining the ingredients – Pour the hot dressing into the bowl with the vegetables. Mix everything thoroughly to combine all the ingredients well. Set the coleslaw aside for an hour to allow the flavors to meld and intensify.
