Their creation was serendipitous—I had forgotten to purchase meat for dinner, and a lonely can of chickpeas sat in my pantry. Chickpea Cutlets
Ingredients:
- 2 cups of chickpeas
- 1 teaspoon of cumin
- 2 eggs
- 1 teaspoon of chili pepper
- 1 teaspoon each of salt and pepper
- 1 teaspoon of baking powder
- 1/2 cup of breadcrumbs
- 3 tablespoons of flour
- 1/2 bunch of parsley
