Chicken delight: Crispy coconut bites with zesty pineapple dip

Pineapple dip
Nuggets and strips require the right accompaniment. There are plenty of dip ideas, but a pineapple sauce works great for coconut bites. The base is, of course, pineapple and mayonnaise, and the sweet flavor is further enhanced by a portion of honey. To balance the sweetness, a spicy note is added in the form of chili flakes.
Coconut chicken strips
They are perfect for a warm dinner and disappear quickly from the table when served at a party. The coconut flake coating is a great alternative to breadcrumbs, panko, or cornflakes.
Ingredients:
- 1 chicken breast fillet
- 1 teaspoon curry
- 1 teaspoon salt
- 1/3 teaspoon pepper
- 2 eggs
- 2 tablespoons wheat flour
- 5 ounces coconut flakes
Pineapple Dip:
- 6 ounces pineapple
- 2 tablespoons honey
- 1 teaspoon chili flakes
- Juice of 1/2 lemon
Preparation:
Step 1: Cut the chicken breast into strips. Place in a bowl, add curry, salt, and pepper, and mix so the spices evenly coat the meat.
Step 2: Now for the sauce. Blend the pineapple pieces with mayonnaise, honey, chili flakes, and lemon or lime juice. Add salt to taste, and pour the mixture into a small bowl.
Step 3: Crack the eggs into a bowl and mix them with flour. Pour the coconut flakes into a separate bowl. Dip the chicken pieces in the egg mixture, then coat them thoroughly in the coconut flakes.
Step 4: Fry the prepared chicken bites in deep, hot oil until golden. After frying, place them on a piece of paper towel. You can also bake them in an air fryer.
Step 5: Serve the fried chicken pieces with the prepared pineapple sauce. Enjoy!
