This is quite an original way to prepare chicken breasts. Instead of frying traditional cutlets or small bites, prepare chopped pancakes with mayonnaise, yellow cheese, and aromatic spices. It’s all about mixing the ingredients. It’s not a complicated dish and will be a tasty alternative to old-fashioned cutlets or nuggets.

You can serve chicken breast pancakes with roasted or boiled potatoes or groats enhanced with chopped fresh herbs and roasted pumpkin and sunflower seeds. Chicken breast pancakes with cheese recipe

Ingredients:

  • 4 chicken breasts
  • 4 tablespoons of potato starch
  • 3 eggs
  • 2 cloves of garlic
  • Parsley
  • 2.5 ounces of yellow cheese
  • 3 tablespoons of mayonnaise
  • Thyme, ground sweet paprika
  • Pepper, salt
  • Oil for frying

Preparation:

  1. Clean the chicken of any membranes, then cut it into very small cubes.
  2. Press the garlic through a garlic press, chop the parsley, and grate the cheese using a fine grater.
  3. Mix the meat, starch, eggs, garlic, parsley, yellow cheese, mayonnaise, and spices thoroughly. If the mixture is too runny, add a bit more starch.
  4. Spoon the pancake mixture onto hot oil and fry on both sides until golden brown.
  5. Place the finished pancakes on a plate lined with paper towels.
