Caviar lime, also known as citrus caviar, is a fruit originating from Australia that has gained popularity worldwide in recent years. Its pulp, reminiscent of caviar, delights with its refreshing citrus taste and aroma. In addition to its striking appearance and flavor, this fruit also impresses with its nutritional properties.

Citrus australasica is a plant with a thorny structure, sometimes forming a small tree, and is naturally found in the subtropical and tropical regions of western Australia. Its cylindrical fruits, resembling cucumbers in shape, can come in various colors, most commonly green or purple. For a long time, they were valued by the indigenous people of Australia, who used them for both culinary and medicinal purposes.

European settlers did not show the same interest and cut it down extensively. It was only at the beginning of the 21st century that caviar lime began to appear on the menus of European and American restaurants. Its cultivation has also expanded to other parts of the world. The pulp of these fruits, composed of spherical, juicy beads resembling caviar, is a valuable and aesthetic decoration for a variety of dishes, both sweet and savory. In taste, caviar lime is similar to lime.

However, it's not just a tasty and beautiful decoration. As a citrus fruit, caviar lime is rich in vitamin C, which is crucial for the proper functioning of the immune system. It helps in the absorption of iron, strengthens blood vessels, and has anti-inflammatory effects. It's also a rich source of flavonoids, which protect cells from damage caused by free radicals.

Caviar lime is also a source of fiber and pectins. This supports the digestive system by sweeping away deposits in the intestines. The pectins contained in caviar lime improve intestinal peristalsis and prevent constipation. This fruit also contains other essential minerals, such as phosphorus, calcium, and magnesium, necessary for strong bones and teeth and the proper functioning of the nervous system. Additionally, it is low in calories—3.5 ounces (100 grams) provide just 30 kcal.
