  • 1 head of cauliflower,
  • 2 tablespoons of 12% cream,
  • 1 tablespoon of butter,
  • 1.76 oz of hard cheese, e.g. parmesan or grana padano,
  • a pinch of nutmeg,
  • salt and pepper to taste.

Preparation:

  1. Remove the leaves from the cauliflower and divide them into medium-sized pieces. Steam until tender. Alternatively, you can boil the cauliflower until it is soft.
  2. Once it's softened, blend it with the cream and cold butter until you have a smooth mass with no lumps. It's best to do this when the vegetable is still hot.
  3. Add the cheese to this mixture and stir until it melts.
  4. Season to your liking with salt, pepper, and nutmeg.
