Cauliflower purée makes for a delicious and wholesome alternative to your dinner. As a substitute for traditional potato purée, cauliflower purée has fewer carbohydrates and calories, making it the ideal choice for those on a low-carb or diabetic diet. When enhanced with butter and parmesan, it fits right in with the rest of your dinner. So instead of boiling it separately in water and serving it with breadcrumbs, try serving it as a purée. It's undoubtedly a choice you won't regret.

Making Cauliflower Purée

As a healthy and delicious vegetable, cauliflower is perfect for those on a diet. It's low in calories and carbs but high in dietary fiber, making it easy to digest. It's stocked with vitamins and nutrients, so incorporate it into your meals more frequently. This simple recipe for purée certainly makes it appealing. Cauliflower has a low glycemic index, which means that consuming it doesn't cause a rapid increase in blood sugar levels. This is important for people dealing with diabetes or insulin resistance.

  • 1 head of cauliflower,
  • 2 tablespoons of 12% cream,
  • 1 tablespoon of butter,
  • 1.76 oz of hard cheese, e.g. parmesan or grana padano,
  • a pinch of nutmeg,
  • salt and pepper to taste.

Preparation:

  1. Remove the leaves from the cauliflower and divide them into medium-sized pieces. Steam until tender. Alternatively, you can boil the cauliflower until it is soft.
  2. Once it's softened, blend it with the cream and cold butter until you have a smooth mass with no lumps. It's best to do this when the vegetable is still hot.
  3. Add the cheese to this mixture and stir until it melts.
  4. Season to your liking with salt, pepper, and nutmeg.

Always serve the finished purée warm. This adaptable side dish pairs well with a variety of main courses. Its subtle flavor and creamy consistency make it the perfect accompaniment to meat and vegetarian dishes. Cauliflower purée can be served alongside roasted chicken, pork chops, grilled ribs, or vegetarian falafels. Enjoy your meal!
