Captain's Style Pork: Recipe
Ingredients:
- 1 lb boneless pork loin
- 1 egg
- Bread crumbs
- Wheat flour
- A piece of Parmesan cheese
- 3 1/3 cups tomato passata
- 2/3 lb mozzarella
- Spices: marjoram, basil, oregano, rosemary, hot pepper, garlic
- Salt, pepper
- Canola oil or lard
Preparation:
- Cut the pork into slices 0.6 inches thick, then gently pound them with your hands.
- In a bowl, mix bread crumbs, Parmesan cheese, and spices. Prepare a plate with flour and a beaten egg.
- First, dip the cutlets in flour, then in egg, and finally in the bread crumb, cheese, and spice mixture.
- Fry the cutlets in hot oil or lard on both sides until golden brown.
- Pour half of the passata into a baking dish. Place the fried cutlets on it and cover with another layer of tomato passata.
- Cover the entire dish with aluminum foil and bake at 350°F for 25 minutes.
- After this time, remove the foil, sprinkle the pork in tomato passata with grated mozzarella, and bake for another 10 minutes.
