Ingredients:
- 1 sweet potato,
- 1 egg,
- 1/3 cup of 30 percent cream,
- spices: salt and pepper to taste,
- grated Parmesan for sprinkling,
- olive oil for drizzling,
- avocado & cream cheese paste for the base,
- pomegranate fruit for decoration.
Preparation:
Step 1: Start by preparing the sweet potato. Firstly, peel it, then divide it in half. Each half should then be cut into thin slices using a mandoline. Afterwards, each slice should be halved.
Step 2: Next, arrange a horizontal row of sweet potato slices on a cutting board, and roll tightly to form a rosette. Place these rosettes into a muffin tin to hold their shape. Drizzle each one lightly with olive oil, and you're ready for the next step.
Step 3: In a separate bowl, combine the egg, cream, salt, and pepper. Mix these ingredients thoroughly before pouring the mixture onto each rosette.
Step 4: Sprinkle each vegetable rosette generously with grated Parmesan before sending it to bake in a preheated oven set to 392 degrees Fahrenheit for 25 minutes.
Step 5: While the rosettes are in the oven, prepare the accompaniments. Combine the cream cheese and avocado for this purpose. In addition, don't forget to separate the pomegranate into smaller segments.
Step 6: Create a meadow-like base on a plate using the green mixture. The baked rosettes are then arranged over this base, sprinkled with extra Parmesan, and finally adorned with pomegranate fruits. That's it! Enjoy your meal!
