Breaded zucchini with feta and honey: A twist on a classic snack

Breaded zucchini has been a staple in some homes for many years. I decided to refresh this snack by enhancing its flavor with exceptional additions: salty feta cheese and honey. Pine nuts add a delightful crunch, and instead of the usual breadcrumbs, I opted for the thicker Japanese breading known as panko.

Feta cheese and honey are a well-known duo to fans of Greek cuisine. These two seemingly contrasting ingredients blend beautifully – the honey's sweetness perfectly balances the feta's distinct flavor. Combined with crispy zucchini slices, you get a dish worthy of culinary accolades.

Ingredients:
- 2 zucchinis
- 3 eggs
- 10 tablespoons of all-purpose flour
- 10 tablespoons of panko breading
- 1.8 ounces of feta
- Honey
- Pine nuts
- Vegetable oil
Preparation Method:
Step 1: Cut off the ends of the zucchinis and slice them into medium-thick pieces. Place the all-purpose flour, beaten eggs, and panko breading on separate plates. Coat the zucchini slices individually, ensuring the breading adheres well to the vegetable. This way, they will be pleasantly crunchy after frying.
Step 2: Heat a relatively thick layer of oil in a pan. Place the breaded zucchini slices in the pan and fry on both sides until they are appetizingly browned. I do this over medium heat to avoid burning the breading. After frying, set them aside on a paper towel to remove excess oil.
Step 3: Lay the fried zucchini on a plate. Sprinkle with crumbled feta cheese, drizzle with honey, and add pine nuts. A tasty and simple snack is now ready. Enjoy your meal!
