Beets to the rescue: Heart-healthy winter recipe revealed

Beets are a popular vegetable that we still don't fully appreciate. They can be eaten in many ways. However, they are most often served as a side dish at lunch. It must be said that they excel in this form. You won't regret even a minute spent preparing this jarred salad.

Why are beets worth eating?

Beets require some "processing" because they must be cooked and grated. However, in return, they offer a wonderful taste and nutritional value. They contain vitamin C and those from the B group. They are also rich in iron, magnesium, potassium, and manganese. These vegetables provide fiber, which supports the digestive system's function. They also contain nitrates converted into nitric oxide, helping to lower blood pressure, and betaine, which supports the liver. Flavonoids in beets, in turn, support heart health.

Dietitians recommend that beets be part of our diet all year round. They are considered one of the healthiest vegetables in the world. During the winter, it's beneficial to have them on hand. Just grab a jar. These beets are delicious and nutritious. They pair well with many dishes and are fantastic with stew, steaks, or meatballs. In the marinade according to this recipe, you won't find too many spices. Beets have a natural taste, are easy to season, and are perfect for pairing with other vegetables.

Beet preparation for winter

Ingredients:

            
  • 4 lbs of beets
  • 4 cups of water
  • 1/2 cup of 10% vinegar
  • 3 tablespoons of sugar
  • 1 tablespoon of salt

Preparation Method:

  1. Thoroughly wash the beets. Cook them in water with 1 tablespoon of vinegar until they are soft.
  • After cooking, drain and rinse with cold water. Set aside to cool.
  • Peel and grate the beets. Place them in jars.
  • In a pot, bring water to a boil. Add sugar and salt. Stir, add vinegar, and cook for 2-3 minutes. Pour the hot marinade into the jars.
  • Line the bottom of a large pot with a cloth. Heat water in it so that its temperature is close to the temperature of the jars. Place the jars in the pot and bring to a boil. Cook for 20 minutes.
  • Carefully remove the jars, turn them upside down, and let them cool.
  • Store jars with beets in a pantry, basement, or another dark and cool place.
