Beef roulades with bacon: Elevate your Sunday dinner game
Roulades are undoubtedly a classic dish. We usually make the pork version, but sometimes we want to indulge a bit and prepare something different. Beef roulades with pickles and bacon are perfect for such occasions.
Sometimes I enjoy experimenting in the kitchen and preparing dishes that even chefs at expensive restaurants wouldn't hesitate to serve. I typically present these sophisticated meals during Sunday dinners when the whole family gathers. Recently, I made beef roulades with pickles and bacon. Needless to say, they quickly vanished from the platter! The combination of tender beef with savory additions and mushroom sauce is unforgettable. These beef roulades differ in taste from the classic pork ones; in my opinion, they are more delicate.

The recipe will guide you through the preparation process. Please read it carefully and follow the steps. Making such roulades will take about an hour, but the delicious result is worth it. Here's the method:
- Cut the meat into slices and pound it with a mallet. Season with salt, pepper, and chili powder, then spread mustard on each slice.
- On each piece of beef, lay finely chopped bacon, pickles cut into thin sticks, onion, and garlic. Roll them into rolls and secure them with a toothpick or thread.
- Melt the butter in a pan and sauté the finely chopped onion and garlic. After a moment, add washed and sliced mushrooms.
- Coat the beef roulades with bacon and pickles in flour, brown them on all sides in oil, and then place them in a pot. Pour the water over them, add a bay leaf, onion, garlic, mushrooms, and honey, and simmer the dish over low heat, checking occasionally if the meat is tender enough.
- Temper the cream and flour by adding hot water to them. Mix thoroughly and pour the mixture into the roulades. Remember to stir vigorously to avoid lumps.
- Serve the beef roulades with bacon and pickles accompanied by potatoes and a salad. Pickles or lightly salted cucumbers are also a great addition.
