Bake your way to a quick, healthy dinner: Potato patties delight
Baked potato patties are a healthier alternative to the fried version. The key to their success is in the coating, which you might already know how to prepare. This traditional method of coating is exactly what our mothers and grandmothers used for delicious patties. Inside, there's a delightful surprise.
Oven-cooked patties are very easy to make and don't require fancy ingredients. It's best to plan ahead and cook extra potatoes for dinner. The leftovers can be transformed into patties, allowing you to have another dinner ready in less than 30 minutes. This dish is suitable for vegetarians, and I will also provide substitutes for a vegan diet.
Ensure a protein source
When preparing potato patties for dinner, it's helpful to include ingredients that provide protein. For a vegetarian option, mozzarella cheese is a great choice. Placed inside the patty, it offers a pleasant, melty surprise. For those following a vegan diet, I suggest using silken tofu, which is a delicate type of soy cheese with a silky texture.
You can serve the potato croquettes with lentil stew or a salad with oyster mushrooms. Mushrooms seasoned with gyros spices can evoke the taste of Middle Eastern shawarma. Slice them into strips and sauté in a pan. Mix with your favorite ingredients, similar to the popular gyros salad.
Dips and sauces for potato patties
Baked patties made from cooked potatoes are perfect as a snack. Prepare smaller portions, such as sticks or little balls. Serve them with Greek tzatziki, spicy sriracha mayo, or a herb sauce based on Greek yogurt, with the addition of cilantro, thyme, or parsley.
How to make potato patties in the oven?
For the patties, the best choice is boiled type C potatoes. They contain more starch, resulting in a soft, crumbly texture. If you enjoy spicy snacks, you can mix breadcrumbs with ground hot peppers.
Ingredients:
- 1 lb of boiled mashed potatoes – can be purée
- 7 oz of firm block mozzarella cheese or silken tofu
- 3 oz of all-purpose flour
- A pinch of salt and pepper
- Optional: 1 egg
- 2 cups of breadcrumbs
- 1 tablespoon of canola oil or olive oil
Instructions:
- Use a potato masher to make the boiled potatoes into a smooth purée or press them through a potato ricer.
- Cut the cheese into cubes approximately 0.4 inches in size.
- Take a tablespoon of the potato mixture and place it on your palm. Place a cube of cheese in the center and shape it into a long patty, ensuring the cheese is in the center.
- Coat the patties first in flour mixed with salt and pepper, then in beaten egg (for a vegan version, mix 1 tablespoon of flour with 3 tablespoons of water), and finally in breadcrumbs mixed with a tablespoon of oil.
- Place the breaded potato patties on a baking tray lined with parchment paper.
- Bake them in an oven preheated to 390 degrees Fahrenheit for 12-15 minutes.
