Ingredients:
- 1 large ripe avocado
- 2 eggs
- A handful of cherry tomatoes
- A quarter of a red onion
- 1 tablespoon of mayonnaise
Instructions:
- Boil the eggs until hard, cool them, peel the shells, and dice them.
- Cut the avocado in half, remove the pit, and scoop out the middle, leaving a margin inside about 0.2 - 0.4 inches thick. Dice the avocado flesh as well.
- Quarter the tomatoes and chop the onion.
- Mix all the ingredients with a tablespoon of mayonnaise and fill the avocado boats.
