Prepare salmon and asparagus boats, and watch your loved ones ask for more
Ingredients:
For the boats:
- 1 lb of salmon,
- 12 green asparagus spears,
- 3 broccoli florets,
- 6 slices of lemon,
- 3 tablespoons of olive oil.
For the marinade:
- 1/3 cup of olive oil,
- 2 cloves of garlic,
- 1 tablespoon of honey,
- 1 teaspoon of Dijon mustard,
- 2 pinches of salt,
- 1 pinch of pepper.
Preparation:
Step 1. Begin with the salmon. Cut it into three equal portions, then make an extra slit in the middle of each piece to form a small pocket.
At this point, I suggest using two wooden sticks to secure the salmon fillet from the top and bottom. This ensures that you don't slice the fish too deeply.
Step 2. Next, craft small boats with the help of parchment paper and two pieces of string. This method saves you from unnecessary dishwashing later.
Step 3. In each boat, arrange the green asparagus, followed by layers of lemon slices and broccoli florets. Drizzle generously with olive oil and season with salt and pepper according to taste.
Then, place the pre-prepared salmon pieces on top of each boat.
Step 4. In a separate bowl, prepare the marinade by combining olive oil, honey, Dijon mustard, peeled and pressed garlic cloves, salt, and pepper. Mix well, then apply it to the fish using a kitchen brush.
Place the boats in a preheated oven and bake for 20 minutes at 340 degrees Fahrenheit.
Step 5. Once done, lightly drizzle the dish with lemon juice and garnish with fresh parsley. Now, it's ready to enjoy!
