The health benefits of groats have been widely discussed. While initial associations might be barley or buckwheat, one should not overlook semolina. It is an excellent idea for a nutritious breakfast or a quick snack. Adding cardamom to it will prove to be a decision you won't regret.

Is semolina healthy?

For some, semolina brings back pleasant memories, while for others, it may carry the weight of preschool trauma. It is, however, worth giving semolina another chance because of its notable properties. Remember, nothing should be forced, but it's worth reconsidering this grain.

Semolina is a real treasure trove of vitamins, packed with the B group vitamins such as B1 (thiamine), B2 (riboflavin), PP (niacin), B6 (pyridoxine), as well as folic acid, potassium, iron, and magnesium. When compared with other groats, semolina contains more iodine and starch. Although it is relatively high in calories, semolina keeps you feeling full for a long time after eating. Starch is an excellent brain fuel; potassium supports the cardiovascular system and helps regulate blood pressure. Like most grains, semolina is also rich in fiber, which aids in combating constipation and promotes healthy bowel function.

Semolina with cardamom

Add cardamom to your semolina recipe; it naturally speeds up metabolism and offers a unique citrus-peppery flavor.

Ingredients:

  • 1.5 cups of milk,
  • 3 tablespoons of semolina,
  • A pinch of cardamom,
  • 1 tablespoon of xylitol, sugar, or another sweetener.

Method of preparation:

  1. Bring the milk to a boil in a pot. Once boiling, add the semolina.
  2. Continuously stir it for a few minutes to prevent lump formation. Simultaneously, sweeten it with xylitol.
  3. Near the end of the cooking process, add a pinch of cardamom. For stronger flavors, feel free to add more.
  4. Pour the semolina into bowls once it's ready.

Serve the semolina with fresh fruits or homemade raspberry juice. Whether enjoyed hot on cold days or cold during the summer, it's sure to be a delight. If you want a less calorie-dense meal, choose water instead of milk to prepare your semolina. However, based on my experience, it tastes best when made with milk.
