Ingredients:
- 8 oz smoked ham
- 3 eggs
- 8 oz sour cream (18%)
- ⅓ cup chopped parsley
- ¼ teaspoon black pepper

- 5 oz shredded yellow cheese
- 6 whole grain or wheat tortillas
Instructions:
Step 1: Dice the smoked ham. You can also use other favorite deli meats, such as poultry or soppressata.
Step 2: In a large bowl, beat the eggs, add the sour cream, chopped parsley, and season with salt and pepper. Mix well, then add the shredded cheese and diced ham, stirring to combine.
