The dish that precedes the Christmas Eve dinner should be anything but ordinary. This isn't about being fussy, it's about making this special time even more enjoyable for your family. In the past, we've suggested serving salmon in leek sauce. Today, however, we're exploring a beloved alternate - the chicken breast.

Compared to salmon, poultry is much easier to work with. It retains moisture well and marries beautifully with a variety of spices. But there's more. Chicken breast essentially serves as a canvas for culinary artistry. From de volaille cutlets to today's recipe - chicken breast stuffed with blue cheese.

The list of reasons why stuffed poultry is a great option is extensive. You'll just have to give it a try. The pairing with blue cheese may initially seem unconventional, but this perception will change after the first bite. You'll soon understand why we deem this recipe as holiday meal perfection.

  • 2 tablespoons of canola oil,
  • 1 onion,
  • 1 tablespoon of butter,
  • 2 cloves of garlic,
  • About 14 ounces of mushrooms,
  • 3 tomatoes,
  • 1 bunch of parsley,
  • About 7 ounces of 30% cream,
  • Salt, pepper,
  • Thyme,
  • Sweet pepper,
  • Chilli (optional).

Instructions:

  1.
  2. Begin by cutting a slit down the side of the chicken breast to form a pocket. Season it with a mixture of oil, mustard, and chicken seasoning.
  3. Cut the blue cheese into slices and stuff them into the pockets along with the chopped sun-dried tomatoes. Use a toothpick to secure the stuffing inside the chicken.
  4. Lightly fry the prepared chicken in a little fat, then bake it in a preheated oven at 320 degrees Fahrenheit for about 10 minutes.
  5. While the chicken bakes, prepare the sauce. Peel and chop the tomatoes, dice the parsley, mushrooms, and onion, and crush the garlic. Sauté all these ingredients in the oil, starting with the onion in the heated oil and butter, then the garlic and mushrooms, and finally adding the tomatoes, parsley, spices, and cream.
  6. Serve the baked chicken breast topped with a tasty sauce. Bon Appétit!
