Cottage cheese casserole — recipe
Ingredients:
- 2/3 lb cottage cheese,
- 3 eggs,
- 2 oz bell pepper,
- 2 oz mushrooms,
- half a bunch of chives,
- 1 oz cheese (mozzarella or cheddar),
- optional: any deli meat,
- salt and pepper to taste,
- favorite spices: basil, oregano, parsley, dill, Herbes de Provence, granulated garlic, sweet or hot paprika, chili flakes (dried or fresh).
Preparation:
- Cut the bell pepper into strips or small cubes. Cut the mushrooms as desired. Finely chop the chives.
- Mix the cottage cheese with the eggs, chopped vegetables, spices, and grated cheese.
- Transfer the mixture to a heatproof dish and bake in the oven preheated to 350°F for 20-25 minutes.
- Serve warm, for example, with a slice of rye bread.
