What to do to prevent mushrooms from darkening?

To keep mushrooms bright, it's a good idea to dry them thoroughly after washing. Use paper towels to remove excess water. Next, slice the mushrooms into thicker pieces to help maintain their structure during frying.

It is also important to use fat that can withstand high temperatures, such as vegetable oil. Heat the fat in a pan over high heat, then add the mushrooms in small batches.

Add lemon juice to the peeled mushrooms before frying to ensure they retain their light color. You can also add the juice during the frying process.

It's crucial to salt them only after frying. Salting during frying softens the mushrooms and causes more juice to be released. Add other spices after the water has evaporated.

A common mistake is putting mushrooms in a cold pan. In such conditions, mushrooms release a lot of water, causing them to stew. To prevent this, always heat the pan with fat to a high temperature before adding the mushrooms.

Another common mistake is adding too many mushrooms at once. This causes the pan's temperature to drop quickly, making it hard for water to evaporate. Fry mushrooms in small batches to allow them to brown rapidly and retain their crispness.

Mushrooms can be enhanced with various spices that accentuate their flavor. Lemon juice not only prevents darkening but also adds a refreshing touch. Garlic and onion can give the mushrooms a more intense aroma.
