The heart of African peanut soup is peanut butter. It's important to choose one that consists solely of nuts, without added fats, preservatives, or salt. If you have a good blender at home, you can make it yourself with peanuts. Fortunately, more and more stores offer ready-made peanut butter with good ingredients.
Ingredients:
- 1 large onion
- 2 garlic cloves
- a piece of ginger
- 1 tablespoon vegetable oil
- 1 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon chili powder
- 1 can diced tomatoes
- 4 cups vegetable or chicken broth
- 1 cup peanut butter
- salt and pepper to taste
- juice of 1 lime
- fresh cilantro leaves for serving
- peanuts for garnish
Preparation:
- Sauté the chopped onion and pressed garlic in hot oil.
- Add cumin, grated ginger, coriander, and chili, and sauté for a while. Adjust the amount of chili to your preference.
- Add canned tomatoes, broth, peanut butter, salt, and pepper.
- Cook over medium heat for about 15-20 minutes, until the soup thickens.
- Blend the soup until smooth. If the soup is too thick, add a bit more broth.
- Season the soup with lime juice and sprinkle with fresh cilantro and crushed peanuts. Serve hot.
