Gyros soup - recipe for a warming meal
Gyros is usually associated with chicken or salad, but it's a flavor that works wonderfully in soup too. The bowl is filled with hearty ingredients such as chicken, colorful peppers, corn, and aromatic spices.
You can easily prepare a whole pot of this soup in one day and reheat it when you come home for your next meal. This warm, invigorating soup will delight you with its taste and warmth after a long day. To make it even more filling, you can add rice or orzo pasta.
Ingredients:
- About 1 lb chicken breast fillet
- About 6 cups vegetable broth
- About 3.4 fl oz sweet cream
- 2 teaspoons tomato paste
- 3 bell peppers (green, red, yellow)
- 2 onions
- 3 cloves of garlic
- About 9 oz mushrooms
- About 3.5 oz corn
- 2 teaspoons gyros seasoning
- 1 teaspoon herbes de Provence
- 2 teaspoons sweet paprika
- Salt and pepper to taste
- Canola oil
- Feta cheese
Instructions:
- Cut the chicken into cubes and place it in a bowl.
- Add a teaspoon of oil, gyros seasoning, herbes de Provence, and sweet paprika, and mix thoroughly. Fry in a pan.
- Remove the chicken from the heat and pour in the cream.
- Chop the onion and sauté it with the garlic pressed through a garlic press.
- Add sliced or diced peppers to the onion and fry together.
- Transfer the vegetables to a large pot, add chopped mushrooms, chicken with cream, tomato paste, and pour in the broth.
- Cook covered for about 20 minutes after the soup starts to boil.
- Towards the end of cooking, add cream and season with salt and pepper. You can also add more gyros seasoning, sweet paprika, and herbs, or enhance the flavor with chili.
